Baked Haddock with Garlic Scape Relish Wrapped in Basil Leaves

2 pieces of frozen haddock, thawed in the fridge

2 tablespoons of garlic scape relish

½ – 1 tablespoon of mayonnaise

½ cup of panko breadcrumbs

Lots of basil leaves

Salt and pepper to taste

Directions: mix the relish, mayo, and breadcrumbs in a bowl; pat the haddock dry then layer the relish paste onto both sides of the fish; wrap the basil leaves around the fish; place on a baking sheet on parchment paper at 400 degrees for about 15-20 minutes until done. The basil leaves will shrink a lot. Serve with a side (I used roasted sweet potatoes).
