BBQ-Lime Mixed Nuts

Recipe developed & contributed by Maureen Gualtieri

In a better world, we’d recommend serving these spicy snacks at your next party or game night. While we wait in our bubbles for parties to be possible again, rest assured these BBQ-Lime mixed nuts are equally enjoyable in glorious solitude in front of your favourite binge-watch!

We used a combo of DFC’s Original Spicy BBQ Sauce and fresh lime juice, but feel free to sub in our Maple Root Beer sauce, and/or any citrus juice that tickles your fancy. You can also customize your nut selection — almonds, pecans, and cashews really shine here. However: If you go small, especially with peanuts, watch them during the last stages of roasting so they don’t get too dark.

BBQ-Lime Mixed Nuts

(Yield: 2 cups)

Ingredients:

2 c. raw mixed nuts

1 tbsp unsalted butter

2 tbsp DFC’s Original Spicy BBQ sauce

1 tbsp fresh lime juice

Preheat your oven to 250 degrees F, and set one of your racks at the middle of the oven. In a microwave safe bowl, nuke your butter until just melted. Add the Original Spicy BBQ sauce and the lime juice, and stir until combined.

Place your mixed nuts in a large bowl and pour the sauce mixture over them. Stir well, until all the nuts are evenly coated with the mixture.

Line a large baking sheet with parchment paper, and spread your mixed nuts out in an even layer, with no overlap. (Indeed, try to space them generously to maximize roastage.) Pop the baking sheet in the oven, and roast the nuts for 45 minutes, stirring well to redistribute them every 15 minutes.

When done, remove from the oven and allow the nuts to cool on the pan. (They may feel a little soft coming out, but will get crunchy as they cool.) Once they are cool enough to handle, they can go straight into your mouth, or can be stored in an airtight container on your counter for up to five days — If they last that long!
